Baklava Recipe

Prep time: 20 mins; Baking time: 50 mins; Total: 1 hour 10 mins

  • Chopped nuts – almonds, walnuts, pistachios (1 pound)
  • 1 cup water
  • 1 tsp ground cinnamon
  • Phyllo dough (1 pack/16 ounce)
  • 1 cup melted butter
  • 1 cup white sugar
  • ½ cup honey
  • 1 tsp vanilla extract
  • 1 tsp grated lemon zest

Preheat your oven to 175° C or 350° F and butter your baking dish. Toss together the cinnamon and nuts. Now place two sheets of phyllo in the bottom of the buttered dish and brush some butter over it. Sprinkle 2-3 tablespoons of the nut mixture on top of the phyllo dough and repeat layers until all the ingredients are used. Then, cut through the baklava vertically and diagonally to form diamond shapes.

Bake in the preheated oven until it turns golden brown and crisp, which would be about 50 minutes. While the baklava is baking, combine sugar and water in a small saucepan over medium heat and bring it to a boil. Stir in the honey, vanilla and lemon zest, lower the reduce heat and let it simmer for 20 minutes. Once the baklava is cooked, take it out of the oven and pour the syrup all over it!

  • ½ cup flour
  • Breadcrumbs
  • Oil for frying
  • 2 cups zucchini, grated and drained
  • ¼ cup of crumbled feta
  • 1 clove garlic, chopped
  • 2 sliced green onions
  • 1 handful of minced herbs (mint, dill and parsley)
  • 1 egg, lightly beaten
  • Salt & pepper to taste

Mix together the zucchini, feta, garlic, onion, herbs and egg and season with salt and pepper. Now add in enough flour and breadcrumbs to the mixture to form balls.   • Black pepper

  • 2 lbs fresh black grouper fillets, cut into 1 ½ inch pieces
  • 2 cans crushed tomatoes with juices drained
  • 1 chopped onion

  • 1 ½ tablespoons small capers
  • 1 diced red bell pepper
  • 4 minced garlic cloves
  • 1 diced yellow bell pepper
  • 1 cup crumbled feta cheese
  • ½ cup white wine
  • ½ cup oil (olive)
  • Kalamata olives

Firstly, preheat your oven to 375°F. Place the fish pieces in a metal baking pan or tray and sprinkle a bit of salt over it. Now combine all the remaining ingredients, except the wine and olive oil, and distribute on top of the fish. Then pour the wine and oil all over it and bake for 35-40 minutes.

Green Bean Casserole (Fassolakia Freska)

  • 2 pounds green beans, ends trimmed
  • ½ cup Greek olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, chopped
  • 1 can diced tomatoes
  • 2 tablespoons tomato paste
  • 1 ½ cups warm water
  • 2 potatoes, peeled and cut in wedges
  • 2 chopped carrots
  • 1 tablespoon chopped fresh parsley
  • ½ cup feta cheese
  • Pepper and salt to taste

Pour the oil into a skillet and set it on medium heat. Add the onions and saute for 5 minutes or until they turn soft. Now add the garlic and saute for another minute. Then add in the potatoes and carrots and cook for about a minute. Now stir in the tomato paste until it is dissolved and add the tomatoes, water, and green beans. Set the heat to a medium-high, cover the skillet and bring the mixture to a boil. Then lower the heat to a simmer and cook until the beans are tender. This should take about 30 minutes. Season with parsley, salt, and pepper and top with feta cheese!

Tomato Fritters (Domatokeftdes)

  • 4 finely chopped tomatoes

Combine all the ingredients except flour and oil in a bowl. Then add enough flour to form a thick batter. In a non-stick frying pan, pour and heat 1/2 to 3/4 inch of oil. Once the oil is hot, scoop the batter by using a tablespoon, drop into the oil, a spoonful at a time and fry until it’s browned. If you want the fritters to be more shapely, you can also set aside flat discs, 2 inches in diameter, and set aside before frying. Turn once to make sure it’s brown on both sides. Then take them out and place them on absorbent paper towels to soak up the oil. Serve with tzatziki and red wine!

Greek Country Salad (Horiatiki Salata)
